One of the popular events every year at VinItaly is the Fresh & Dried seminar, where tank samples of the classic Venetian grape varieties used in Valpolicella and Amarone are shown in two styles - one with appassimento and one without. This is an opportunity to delve deeper into the history of Venetian wine culture while exploring the science around appassimento through tangible examples. As part of the seminar, we will taste older vintages of Amarone from the last two decades to discuss how the appassimento process affects maturation in bottle compared to other classic Italian reds. Hosted by James Bornn who works for Masi Agricola based in Western Canada, with samples provided by the Masi Technical Group.
